Flesh color and what it means

Skin color is mostly a market matter; flesh color is a chemistry matter. It predicts nutrition, taste, and the uses a variety suits.

Watch out: sweet ≠ sugary

“Sweet potato” is a name, not a guarantee of sweetness. White-fleshed staple types can be quite dry and bland — ideal for filling meals and for processing, but a disappointment if your market expects dessert-sweet orange roots. Always match variety to your buyers.

Dry matter: the hidden spec

Dry matter is the share of root weight that is not water. It decides cooking quality and processing value:

  • High dry matter (28–35%): mealy, firm after boiling; best for flour, starch, and frying; the preferred eating type in much of Africa.
  • Medium (24–28%): all-round fresh-market types.
  • Low (20–24%): soft, juicy, very sweet; “dessert” varieties and most orange-fleshed exports; poor for starch but loved as roasted treats.

Processors pay attention to dry matter because it sets the flour/starch yield per tonne of roots.

How to choose a variety

Field guide: the 5-question variety check

  1. Market first: What do your buyers actually want — color, sweetness, size, dry matter? Check prices for orange vs white in your market before you plant.
  2. Season length: Does the variety mature inside your frost-free window? Short seasons need early varieties (90–110 days).
  3. Resistance: Ask your extension service which released varieties resist the local pests and diseases — especially virus disease (SPVD) and weevil pressure.
  4. Purpose: Fresh eating, processing (flour/starch), or animal feed? Each favors a different flesh type.
  5. Provenance: Start from certified or known-clean planting material of a named variety — not an unlabeled mix from the market.

Pro tip: plant a portfolio

Rarely plant one variety alone. A mix — an early type for first cash, a high-dry-matter staple type, and an orange-fleshed type for nutrition — spreads risk from weather, pests, and price swings, and extends your harvest window.

Deep dive: breeding & biofortification

Sweet potato breeding is unusually hard. The crop is a hexaploid — six chromosome sets (2n = 6x = 90 chromosomes) — with complex genetics, and it flowers poorly in some environments — so breeders must manage pollination, seed set, and a long seedling-to-field pipeline. Most farmers never see the seed: released varieties are multiplied vegetatively, which keeps them true to type.

Biofortification is the shining success. Conventional breeding (no genetic modification) raised beta-carotene levels in orange-fleshed lines from a few hundred to many thousands of micrograms per 100 g fresh weight. Combined with vine-multiplication and farmer training, programs like HarvestPlus and national partners moved these varieties to millions of households, measurably reducing vitamin A deficiency in countries like Uganda, Mozambique, and Nigeria.

Breeders are also chasing SPVD resistance (see Diseases), drought tolerance, and higher dry matter — often trading one trait against another, which is why no single “perfect” variety exists.

Frequently asked questions

Which variety is the sweetest?

Generally the low-dry-matter orange and amber types — like Beauregard or Covington — taste sweetest, especially after curing. White-fleshed staple types are starchy and less sweet. “Sweet” is a spectrum, not a single variety.

Can I plant roots bought from the market?

Technically yes — bedded roots produce slips — but market roots are often mixed varieties, may carry weevils, and can harbor viruses. For serious production, start from certified or known-clean planting material of a named variety.

What does OFSP stand for?

Orange-Fleshed Sweet Potato — biofortified varieties rich in beta-carotene, promoted to fight vitamin A deficiency, especially in sub-Saharan Africa. They taste sweet, cook moist, and are often the highest-value fresh-market type.

Do varieties behave differently in storage?

Yes — storage life, sprouting, and chilling sensitivity vary. High-dry-matter, well-cured types generally store longest. Ask your seed supplier for storage ratings, not just yield.
