What is a sweet potato?
The sweet potato is a herbaceous perennial vine grown as an annual for its swollen, edible storage roots. It sprawls along the ground, rooting at its nodes, and produces heart-shaped to deeply lobed leaves. The plant is tropical in origin and cannot survive frost, but it is remarkably tolerant of heat, drought, and poor soils once established.
It is a dicot in the morning glory family β botanically a distant cousin of the garden morning glory and the water spinach (kangkong), and not related to the Irish potato, yams, or cassava.
Science deep dive: roots, not tubers
What you harvest is a storage root formed by secondary thickening of an adventitious root β the vascular cambium lays down extra xylem and parenchyma tissue, and the root swells. A potato tuber, by contrast, is a modified stem (a swollen stolon) bearing βeyesβ (buds). This matters in practice: sweet potato roots have no buds, so you cannot plant pieces of root and expect sprouts β the crop is planted from vine cuttings or slips (see Propagation).
Where it comes from
Sweet potato was domesticated in the Americas β most evidence points to the region of present-day Peru and Ecuador β at least 5,000 years ago. It was a staple of pre-Columbian agriculture and spread through the tropical Americas.

Pro tip: the vitamin A story
White- and cream-fleshed varieties β the most common in Africa and Asia β contain almost no beta-carotene. Orange-fleshed sweet potato (OFSP) was bred to fix this: a modest daily serving provides most of a child's vitamin A needs.
