What the old storehouses got right
Long before curing rooms and refrigerated stores, farming cultures kept sweet potato sound for months with pits, clamps, sand, and thatch. Some of those structures accidentally got the science exactly right; others lost a third of the crop. This is a tour of the world's traditional stores — and what each one teaches us about the ideal conditions for keeping roots (see Curing & Storage for the full recipe).

What the science says roots want
Sweet potato roots store well when they are cool but not cold (~13–16 °C), humid (85–95% relative humidity so they don't shrivel), dark (light triggers sprouting), and ventilated enough that moisture doesn't condense onto the roots. Above ~16 °C they sprout and shrivel; below ~10 °C they suffer chilling injury; wet and airtight, they rot. Crucially, nothing stores well unless the harvest was cured first — the 29–32 °C, 85–95% humidity, 4–7 day healing that sets the skin (see Curing & Storage).

Traditional stores by region
The Pacific: Māori kumara pits
In Aotearoa (New Zealand), Māori growers farmed kumara at the very edge of its climatic range and developed the crop's most famous traditional store: a pit dug into the ground, lined and covered with layers of soil, bracken, and thatch. The earth around the pit held the temperature steady and cool through the growing season's heat; the covering kept it dark and slowed moisture loss. It was an elegant use of the ground as a natural cooling chamber (see Around the World).
What it got right: the cool, dark, humid microclimate of the earth. What it got wrong: ventilation and rot control — pits had to be opened and rotted roots removed regularly, and a wet season could flood them. Modern kumara growers still cure and store in controlled rooms, using the same insight with better control (see Curing & Storage).
Africa: pits and clamps
Across East and West Africa, roots are stored in underground pits or clamps — mounds of roots heaped on the ground or in a shallow pit and covered with soil, straw, and a thatch roof. The earth keeps the store cool and humid; the straw keeps soil out of the roots. Where pits are dug deep and dry, losses can be modest; where they flood or seal too tightly, a large share of the harvest rots or sprouts.
How farmers get more from a pit
Best-practice pit storage observed across Africa: cure or air-dry roots for a few days first; line the pit with dry straw; pack roots loosely, never in deep airtight piles; add a ventilating chimney of straw or bamboo through the covering; inspect every few weeks and remove rots before they spread. Asia: sand, bamboo, and the storehouse
- Sand storage (Triple S): the standout Asian-influenced innovation — storing seed roots in dry sand through the dry season, then sprouting them for planting. Developed by the International Potato Center for dry areas, it protects roots from drying, pests, and premature sprouting (see Clean Seed Systems).
- Raised bamboo and wooden stores: in humid Southeast Asia, roots are often kept on raised, ventilated racks under thatch — off the damp ground, air moving around every root. Excellent ventilation; the weakness is heat, so these stores suit short holds in the cool season.
- The family storehouse: China's and Japan's farm stores combine cool rooms, straw bedding, and careful inspection — the closest traditional cousins to the modern controlled store, and the template for curing-and-holding on many farms (see Curing & Storage).
The Americas: cellars and the sun
Temperate growers in the Americas leaned on the root cellar — the same earth-cooled logic as the kumara pit, refined into a building. Where cellars were cool and humid, they worked; where they were too warm (or too dry), roots shrivelled and sprouted. The hard-won American lesson was the importance of curing before storage: US research in the early 1900s turned curing from folklore into a measured recipe, and it remains the foundation of commercial storage today (see Temperate Guide).

The pattern: cool, dark, humid, and aired
Every successful traditional store got at least three of the four conditions right by accident. If you are building or improving a store today, work to that list: keep it cool (shade, depth, or night air), dark, humid (pack with straw or sand, don't pile airtight), and inspected — and always cure the harvest first (see Curing & Storage). A few weeks of proper curing is worth more than any storehouse.

Can I really store roots for months without electricity?
Yes, if you do the steps in order: harvest gently, cure at 29–32 °C for 4–7 days, then store cool (~13–16 °C), dark, and humid — in sand, straw, a shaded ventilated store, or a pit. The cultures in this article did it for centuries (see Curing & Storage).
Why do my pit-stored roots rot in the middle?
Airtight piles trap heat and condensation, and one rotting root rots its neighbours. Store in smaller, looser piles, line the pit with dry straw, add a ventilating chimney, and inspect — remove rots the moment you find them.
Is sand storage only for seed roots?
Sand storage (Triple S) was developed for seed roots, but the principle — dry, stable, dark medium — also works for short holds of eating roots. The key is that roots must be cured and healthy before they go in (see Seed Systems).
What is the single biggest mistake in traditional storage?
Storing uncured, bruised, or sun-scalded roots as if they were healthy. Curing heals the wounds that rot enters through — without it, no store design saves the crop (see Curing & Storage and Harvesting).
