When to harvest
Sweet potato has a flexible harvest window β you can dig early for small roots, on time for the main crop, or late for size. The signals:
- Calendar: 90β150 days from planting depending on variety (see Varieties).
- Vine signals: leaves yellow and drop, vines senesce and thin out.
- Root check: dig a sample; roots at marketable size with firm, well-set skin are ready.
- Market: prices and contracts often dictate the date more than the plant does.
Pro tip: know the harvest math
Sweet potato keeps growing while in the ground β every extra week of bulking adds tonnage. But late-harvested roots face more weevil exposure, heavier damage at digging (roots are deeper and larger), and tougher soil. Balance the market price, the weevil pressure, and the weather: early for price, on time for storage quality, late only when conditions are right.

Before harvest: setting up the dig
- Stop watering 2β3 weeks ahead β dry soil hardens skin, reduces rot, and makes digging cleaner (see Irrigation).
- Slash or remove vines a few days before digging on dense fields β it exposes the soil and makes the work easier; leave the vines for livestock feed or compost (see Processing).
- Choose your day: dry soil, dry weather, and the cool of the morning. Wet soil clings to roots and invites bruising and rot.
Digging methods that protect the crop

The common thread: loosen the soil and lift the whole root cluster rather than spearing individual roots. Dig wide and deep enough that the tool passes below and beside the roots, not through them.
Watch out: the three harvest sins
Spearing (digging into roots), dropping (tossing roots into baskets), and skinning (pulling roots while soil is wet or handling them roughly) are the top causes of post-harvest loss. Every wound is a door for rot in storage (see Curing & Storage). One gentle digger out-harvests two careless ones.

Field handling: the harvest-to-storage bridge
- Sort as you go: separate damaged, weevil-tunneled, and rotting roots from the sound ones immediately β one bad root in a basket rots its neighbors.
- Dry before packing: leave freshly dug roots on the soil surface for 1β3 hours (sun-drying) so skins set and wounds begin to heal β but do not leave them in hot sun long enough to scald or shrivel.
- Handle gently, carry in padded/vented crates β never throw, and never stack deep enough to crush.
- Get to curing quickly: the faster roots reach curing conditions (see Curing & Storage), the more of the harvest survives.
Science deep dive: why fresh wounds decide storage life
A freshly dug sweet potato is a wound. Skin breaks expose moist flesh to fungi and bacteria, and every hour of delay to curing lets pathogens establish. Curing (29β32 Β°C, 85β95% humidity, 4β7 days) triggers suberization β the plant seals wounds with a waxy cork layer that blocks water loss and infection. Roots that reach curing within hours of digging can store for months; roots left wounded and hot for a day may rot within weeks. Harvest speed and care are therefore storage investments, not just field chores.

How do I know when sweet potatoes are ready?
