Post-harvest losses on sweet potato routinely reach 20–40% — and nearly all of it is preventable. One process, curing, is the pivot: do it right, and roots store for months; skip it, and the same roots rot in weeks. Curing is the highest-leverage, lowest-cost practice in all of post-harvest sweet potato.

Why curing: the wound-healing process
Every root dug from the field carries wounds: torn skin, snapped rootlets, bruises. These wounds are open doors for fungi and bacteria — and they leak water, so roots shrivel fast. Curing gives the root a few days of warm, humid conditions to do what plants do naturally: seal its own wounds.
- Suberization: the plant deposits a waxy cork layer (suberin) over wounds within days, blocking water loss and infection.
- Skin set: the whole skin firms and thickens, protecting against later handling.
- Flavor development: curing also converts some starch to sugar — cured roots taste sweeter and cook better.
Science deep dive: the numbers behind the recipe
Curing works fastest at 29–32 °C — above ~35 °C roots scald, below ~24 °C healing slows to uselessness. High humidity (85–95%) keeps the wound surfaces moist so the suberization layer can form; dry air stops the process and shrivels roots. Four to seven days is enough to seal wounds; longer risks sprouting and rots. After curing, storage at 13–16 °C with ventilation keeps roots dormant and dry — that combination is why the same crop can last 6–9 months in a good store or two weeks in a bad one.
How to cure: practical recipes
Field guide: curing without a special room
- Right after harvest, move sound roots into a warm, humid place — a closed room, shed, or covered pit.
- Get to ~29–32 °C: in the tropics, a closed shed in the heat of the day often reaches this naturally; add a fire or heat source in cooler seasons — carefully, never with flames near the roots.
- Keep it humid: sprinkle the floor or hang damp sacks; the air should feel steamy. A bucket of water in a sealed room works wonders.
- Ventilate lightly daily so roots don't suffocate or condense-drip.
- After 4–7 days (check: wounds feel dry and sealed, skin rubs off less), move roots to cool storage.

Watch out: chilling injury
Sweet potato is tropical — it is damaged by cold, not preserved by it. Storage below about 10 °C causes chilling injury: internal browning, off-flavors, hard “core” tissue, and rapid rot once returned to warm air. Never refrigerate fresh sweet potatoes for long, and keep stores above ~12–13 °C.
Storage structures: from pits to barns
- In-ground / clamp storage (traditional): roots layered in a dry pit or mound, covered with soil and thatch. Cheap, but temperature and humidity are hard to control — check often and remove rots.
- Root cellar / underground store: where winters are cool, an insulated cellar gives the 13–16 °C sweet spot naturally.
- Ventilated barn or shed: raised shelves or slatted crates, shaded, with vents for airflow — the practical small-farm standard in the tropics.
- Controlled store: fan- and humidity-managed rooms for commercial scale; the investment pays where storage extends a high-price season (see Economics).
Storage management: the habits that matter
- Only sound roots go in: cull cuts, bruises, weevil damage, and soft spots before storing — one rotting root can seed a bin (see Harvesting).
- Don't stack deep: deep piles crush lower roots and trap respiratory heat. Crates, shelves, or shallow piles with airflow beat one deep heap.
- Inspect regularly: a weekly walk-through to pull rots and sprouts saves the pile; start near the vents and bottom, where trouble begins.
- Keep the store clean between seasons — remove residues, let it dry, and (where needed) treat surfaces.
Pro tip: store to sell, not to keep
Storage is a market tool: roots held for the off-season high-price window routinely sell for double or more the harvest-time price (see Economics). But storage has costs — spoilage, shrinkage, sprouting, labor. Store the best roots for the best window, sell the rest quickly. A 15% storage loss on a 100% price gain is a good trade; on a 10% gain it is a loss.
Frequently asked questions
Can I store sweet potatoes in the refrigerator?
Not for long. Home refrigerators run ~4–7 °C, which causes chilling injury — hard cores, off-flavors, and rot. Cure the roots, then store in a cool (13–16 °C), dark, ventilated place instead.
Why do my stored roots rot quickly?
Almost always one of: uncured wounds (skipped or botched curing), damaged roots stored alongside sound ones, storage that is too warm/humid or too cold, or no ventilation. Fix the chain — harvest gently, cure properly, store sound roots only.
How long can cured roots be stored?
With proper curing and 13–16 °C storage, 4–9 months is realistic for many varieties. High-dry-matter, well-cured types store longest; soft “dessert” types keep less well — check your variety's reputation (see Varieties).
Can I cure without electricity or a heater?
Yes — in the tropics a sealed shed in the hot part of the day often reaches curing temperatures naturally; add humidity with water pans or damp cloth. It is not as precise as a controlled room, but even partial curing beats none at all.
