The Asian landscape

China alone grows more than half of the world's sweet potato — and much of it never reaches the dinner table as a fresh root: it becomes starch, noodles, snacks, and feed (see Processing). Seasons, monsoon, and typhoons

Across monsoon Asia the pattern is: plant as the rains establish, harvest before the next risk peak. In typhoon zones the calendar is defensive — harvest before typhoon season where possible, because flooding and vine damage finish a crop fast. Varieties by use

The variety question in Asia is often answered by the factory: starch plants want high-dry-matter white types, snack makers want crisp yellows, pigment buyers want deep-purple flesh, and dessert markets want soft, sweet oranges and ambers (see Varieties).
